Garbanzo Bean Salad

Keeping healthy options at the ready is key when trying to stay fit or lose weight. This chickpea salad is easy to make and has simple ingredients. Add all the below in a large (sealable / glass is best) bowl. Let chill for about an hour and enjoy!

Ingredients

  • 1 can of organic garbanzo beans
  • 1 cup diced red onion
  • 1 cup diced celery
  • 1/2 lemon squeezed
  • 1 red bell pepper diced
  • 2-3 tbsp. chopped fresh parsley
  • salt and pepper to taste
  • 1/2 cup – 1 cup of apple cider vinegar

If you want to make this a big more pumped up meal you can add lettuce, cucumber, and if you want animal protein some grilled diced chicken would be a nice addition too.
