These ingredients are a favorite of mine in the Autumn months. Easy to make and tastes delicious. The shitake mushrooms have a woodsy yummy deep flavor that makes this a dish you will want to make over and over again.
Ingredients
- 2-3 cups diced butternut squash
- 1 onion sliced
- 2 cups cauliflower florets
- 2-3 cups shiitake mushrooms
- Olive Oil
- Lemon Juice
- Salt, Pepper, Red Pepper Flakes, Thyme, Rosemary
- Optional: Balsamic Glaze
Step 1: In large mixing bowl add your diced squash, onions, cauliflower and mushrooms. Stir in 3 tbsp. of olive oil, juice from 1/2 lemon. Mix to cover everything with oil and juice.
Step 2: Line a large baking sheet with foil and spread mixture over entire pan. Season (1-2 tsp. of each) with salt, pepper, pepper flakes, thyme and rosemary.
Step 3: Bake at 400 degrees for 30-40 minutes. Halfway through use spatula to move mixture around. Last 5 minute turn to broil to brown and crisp the top. Each oven is different, so be sure to keep an eye on the food so it doesn’t burn.
Step 4: Option to drizzle balsamic glaze across the top for added flavor.
This is a great dish in the Fall, and as a side to a turkey or roasted chicken!
