5 Minute Chickpea Salad Mix


1/2 cup White Vinegar

1/2 diced Vidalia onion

1 Red or Yellow Diced Bell Pepper

Fresh Parsley (2-3 tbs. chopped leaves)

2 Cloves Minced Garlic

1/2 Lemon squeezed

2 cans of rinsed cooked garbanzo beans


Mix all ingredients together

Season with salt and pepper to taste

Let sit in air tight container for a few hours so the beans soak up the vinegar.

Enjoy on a salad, on top of crackers or just by the spoonful.
