Baby Friendly Banana Chia Muffins

As my 15 month old continues to grow, so does her appetite. Whatever I am eating she wants to eat, whatever I have prepared for her she doesn’t want to eat. The one thing I can always count on her liking is bananas. I had some ripe ones and decided to prep some muffins that she would **fingers crossed** actually like and eat! Check out the recipe below and make it for yourself and your little one.

Side note: She did like them! She and my husband devoured these within 3 days.

Ingredients

  • 2 ripe bananas
  • 1/2 cup unsweetened almond milk
  • 1 cup ground oats
  • 1 scoop protein powder
  • 1 tsp cinnamon
  • 1/4 cup chia seeds
  • 1 egg
  • 1-2 tbs. softened coconut oil
  • 2 dates
  • 1/3 cup greek yogurt
  • baking powder
  • 1 tsp. salt

Preheat oven to 350 degrees

First, place dates in warm bowl of water for 2-5 minutes to soften (remove pits)

Mix all dry ingredients together

mash banana and blend with dates, egg, yogurt and almond milk

use (6) holder muffin tin and grease each tin with coconut oil

add dry ingredients to wet – and mix well

Evenly layer into muffin tin

Cook for 15-20 minutes or until tops are golden brown

Let cool, and enjoy.
