Simple Twist on Shepherd’s Pie


  • 1 lb. ground turkey
  • 1 tbs olive oil
  • 1/2 yellow onion diced
  • 3 large carrots diced
  • 3 medium sweet potatoes
  • 1 cup organic corn kernels
  • coconut oil spray
  • paprika, salt , pepper, garlic powder, onion powder, rosemary, thyme (1 tsp each or more to your liking!)

Cooking Instructions

Peel and slice all the sweet potatoes.

Boil 4-6 cups of water in large pot. Once water begins to boil add in sweet potato. Cook on medium heat until potatoes are soft enough to stick a fork through.

While potatoes are cooking you can start on the ground turkey! In large skillet cook ground turkey with olive oil. Season with salt and pepper. Once fully cooked, set to the side.

In same skillet sauté onions, carrots, and corn for 3-5 minutes. Add the turkey back to skillet and add additional seasonings and mix together.

While the veggies are cooking you can strain your potatoes and MASH. Butter can be added if you would like (1-2 tbs.) You can use a food processor or an old fashioned masher.

Using a traditional glass pie dish spread your turkey and veggie mixture throughout.

Next, spread the mashed sweet potato over the turkey as best as you can. Salt and pepper the top.

In a 400 degree oven cook the dish uncovered for 15 minutes or until the top is golden.

Serve and enjoy!
