Did you know that 1 medium sized banana contains around 12 grams of sugar? The most common types of sugar found in ripe bananas are sucrose, fructose and glucose. With that being said… why add more sugar to something already so sweet?
Here is a simple recipe for making banana bread without all the added crap. I even use protein powder in this bread so not only is it lower in sugar, but it includes healthy ingredients. You may even have a slice after a rigorous workout.
Ingredients:
- 2 ripe bananas
- 1 tbs baking powder
- 1 scoop vanilla or plain protein powder
- 1/2 cup coconut flour
- 1 tsp. vanilla extract
- 2 tbs. maple syrup optional
- 1 tsp salt
- 2 tsp cinnamon
- 2 tsp nutmeg
- 2-3 tbs of unsweetened almond milk
- 1 tbs melted coconut oil
- 2 eggs / 3 egg whites
- chopped walnuts optional
In one bowl mix all dry ingredients together. In the other add all wet ingredients. Slowly add dry ingredients into wet and mix well.
Tip: Open bananas and use fork to press down and mush before adding to wet ingredients.
Spray loaf pan with coconut oil spray and evenly spread mixture into pan.
Bake for 20-25 minutes at 350 degrees.
Slice up (6-8 slices) and enjoy!
