Make Ahead Egg Muffins

Batch cooking muffins is one of the easiest ways you can plan ahead for meals. This recipe is great as a snack after a workout or for an easy to transport breakfast.

Combine all the ingredients below into a large bowl and mix well. Use a 12 cup muffin tin and spray with olive oil or coconut oil spray. Spray enough around the entire tin so the muffins don’t stick after cooking.

1 muffin contains around 6 grams of protein and 2 grams of fat.


  • 1 cup egg whites
  • 6 eggs
  • 1/3 cup diced onion
  • 1 cup chopped spinach
  • 1 cup chopped mushrooms
  • salt,pepper,paprika,onion powder,garlic powder ( 1 tsp each or to taste)
  • 2 tbs hot sauce *optional

Cook for 20 min at 350 degrees.

Let them sit for 10-15 minutes before removing from tin. Refrigerate up to 3 days.
