Zoodles and Mushroom Stir Fry

I love to use my spiralizer and cooking zoodles is a healthy alternative to traditional spaghetti. If you are looking for a healthy and easy meal during the week, I highly suggest this dish.

You can easily sub in different beans and mushroom types to your liking.

A Few Tips:

Keto Folks: Replace the beans with ground turkey or beef. You can also replace the tomatoes with spinach for even lower carb count.

Whole 30 folks: Remove beans and add in ground beef or turkey and of course skip the cheese!

Ingredients:

2-3 Spiralized Zucchini

1/2 Onion Chopped

1 cup Garbanzo Beans

1-2 cups halved Cherry Tomatoes

2 cups sliced Cremini Mushrooms

1/2 cup sliced green or black olives

2 tbs. Olive Oil

2 cloves garlic minced

Salt & Pepper to Taste

*I also used Primal Palate’s Amore Seasoning. If you don’t have this then use the following seasonings to taste: Rosemary, Onion, Oregano, Thyme, Basil, Parsley, Red Chili Flakes.

*Optional: Sprinkle Feta cheese on top for added flavor

Instructions:

Heat oil up in large skillet. Cook up the onion and garlic on low until onions are translucent.

Add in mushrooms, beans, olives, tomatoes and stir all ingredients together. Let cook on low for 2-3 minutes.

Drop in spiraled zucchini and season entire dish.  Toss well so noodles are dressed with pan juices.

Transfer to plate and sprinkle Feta cheese on top for added flavor.
