Chicken & Veggies Slow Cooker Dinner

Slow cooked chicken thighs have always been my go to slow cooker meal. You can mess around with the types of veggies you want to use and experiment with seasonings, but no matter what the chicken thighs on the bone are amazing when cooked over a long period of time. (The meat falls right off!)

After a long day at work there is nothing better than coming home to a house that smells like amazing food and better yet NO COOKING LEFT TO DO!

Here’s what you need….



4-6 Chicken Thighs (on the bone)

1 medium onion

2 Sweet Potatoes

1-2 cups Shittake Mushrooms

4-5 Carrots

1/4 cup Balsamic Vinegar

Olive Oil

Salt & Pepper

Cilantro (optional)

*Primal Palate Meat and Potatoes Seasoning

(* if you don’t have this you can use Paprika, Onion Powder, Garlic Powder, Oregano)


Drizzle olive oil around the bottom of the slow cooker pot.

Peel the carrots and place on the bottom of the pan.

Roughly chop the onion and sweet potato into large chunks and place around the pot.

Remove stems of the mushrooms and toss into pot.

Season ingredients with salt and pepper, pour in balsamic vinegar.

Season both sides of the chicken thighs with primal palate seasonings ( or seasonings listed above) and place on top of veggies in pot.

Drizzle olive olive over the top of the chicken.

Turn to slow cook low (8 hours) or slow cook high (4 hours) if you are planning on eating earlier. I use a Ninja Slow cooker and it is the best!

Enjoy and sprinkle with cilantro for an added kick of flavor and a pretty looking plate.
