If you are looking to change up your snack game then I highly suggest trying out my Avocado Toasted Muffin recipe. This is REALLY easy to make and only takes a few minutes.
This snack is high in healthy fats and will keep you full and energized. I like to add the red pepper flakes on for a little spice, but do whatever works best for you! Enjoy.
Ingredients (serves 2)
1 whole Ezekiel Muffin (or any sprouted grain muffin)
1 Whole Ripe Avocado
Drizzle of Olive Oil
2 tbs. chopped fresh Cilantro
1 tbs. Sesame Seeds
1 tsp. Red Pepper Flakes
Salt & Pepper to taste
This is enough for two people to snack on! Remember, this is a snack to tide you over not a MEAL so 1/2 avocado is a perfect portion size for one person. I wish that weren’t the case as I could eat 5 avocados in one sitting with a spoon and salt shaker.
