I am diggin this cucumber salsa and I think you will too! The cucumbers give it a little crunch and the jalapeno’s keep it spicy. Check out the simple recipe below and try it on sandwiches, fish tacos, or over a bed of lettuce for a salad topping.
Ingredients
- 3-4 tomatoes on the vine (or whatever your favorite tomato is!)
- 1 cucumber
- 1/2 vidalia onion
- 1 garlic glove
- 1 jalapeno
- Fresh Cilantro (2-3 tbs)
- 2 tbs olive oil
- 1/2 cup red wine vinegar
- 1/2 lemon
- 1 pinch of salt
- 1 pinch pepper
Instructions
Dice your tomatoes and place into colander to strain some of the juice out.
* Press down on tomatoes to help get the juice out of the tomatoes. If you prefer your salsa to have more juice leave the tomatoes out of colander. I prefer a chunky salsa without a ton of liquid.
Dice your onion, cucumber, garlic, jalapeno and place in large mixing bowl.
Add tomatoes and roughly chopped cilantro to bowl. Add olive oil, seasonings, juice from 1/2 squeezed lemon and vinegar. Mix all together and place in mason jar or glass air tight container.
Keep in fridge for up to 7 days.
