I made homemade almond milk tonight and it tasted SO good! When all was said and done I
had a big bag of almond meal leftover from my blended almonds. I decided to throw in the mixer with some fixins and make a quick batch of cookies. If you ever find yourself in that situation, try this recipe out, or you can buy almond meal from the store 🙂
Ingredients
- 1 1/2 cups almond meal
- 2 tbs. maple syrup
- 1 tsp salt
- 1 tsp baking powder
- 1/4 cup shredded coconut
- 2 tbs. peanut butter
- 1 tsp. vanilla extract
- 1 tbs. melted coconut oil
- 1 egg
Instructions
Blend all ingredients together. Preheat oven to 350 degrees. On a non stick baking sheet form mixture into flattened balls. (the almond meal cooks better and gets crispier if you flatten the cookies). This mixture should make 10-12 cookies.
Cook for 15 minutes or until golden brown.
