Raw Food Reset: Day 1

I started my day with a fresh pressed juice! It sounds glamorous, but I actually turned the juicer on and started pressing a cucumber through when I realized I never placed the cup under the spout. So yeah.. the juice sprayed all over the counter.

Despite my early morning mishap, the rest of the day went rather smoothly. Here is a snapshot of what I ate today:

Meal 1: Green Smoothie

  • 1 green apple
  • 2 large bunches of kale
  • 2 cups of baby spinach
  • 2 mini cucumber
  • 1/4 lemon

Snack: Handful of almonds

Meal 2: Large salad with tons of greens and other veggies + cashews + vinegar

Snack: Mango 

Meal 3: Large salad with avocado, pumpkin seeds and other colorful veggies.

+ homemade salad dressing (recipe coming soon!)

Snack: Pistachios

It is the end of day 1 and I feel pretty good.. I am not very hungry as I go to bed tonight, but I do think I need to incorporate more protein into my day tomorrow. Stay tuned as I take on day 2 tomorrow.
