Spiraled Zucchini and Shrimp


Tonight’s dinner was a healthy twist on the well known Shrimp Scampi Dinner. If you are trying to stay fit or lose some lbs. try out this recipe! You will swear this zucchini tastes just like pasta! ( ok, it definitely doesn’t, but it still tastes great!) 

Ingredients: (servings 2)

  • 3 Zucchini
  • 6 ounces shrimp
  • 2 cups cherry tomatoes
  • 1/2 cup diced yellow onion
  • 1/2 cup sliced black olives
  • White Wine (any kind)
  • 2 tbs olive oil
  • 2 cloves garlic
  • red pepper flakes
  • salt+pepper
  • dried basil
  • dried oregano


– Place thawed shrimp in a bowl with 1 tbs of olive oil, crushed garlic, and seasonings.

-Spiralize the 3 zucchinis and mix in a large bowl with olives, tomatoes, 1 crushed garlic clove, onion, and 1 tbs olive oil. Season to your liking with seasonings listed above.

-Begin cooking the shrimp on medium heat. Pour in 1/4 cup white wine. At the halfway point, throw in zucchini mixture. Cook together for another 3-4 minutes.

If you tolerate dairy, try sprinkling some feta cheese on top for an added kick! ENJOYfullsizerender
