Good Craving: Pumpkin Puree

pumpkin-trailer-bigI LOVE the month of October. It is my favorite time of year because the weather gets colder and the colors of the leaves change to bright oranges and reds. I know that Summer is typically the most loved Season, but I am a sweater lovin, pumpkin carvin, and apple pickin kinda girl.

When we think of Fall and the month of October we think about pumpkins. Yes you can carve them into cool jack-o-lanterns, but you can also use their flesh and seeds. (sounds brutal)

I am on a pumpkin puree kick this week and I would love to share some ideas with you. 

  • Pumpkin Muffins: Just because they are baked in muffin tins, does not mean they need to be chock full of sugar. The recipe I am using this week is from the Tone it Up Program. It is gluten free uses pure maple syrup and unsweetened apple sauce. You can view another one of their pumpkin recipes here for free.
  • Pumpkin Smoothie : Stay in the October spirit by throwing in a few tablespoons of pumpkin puree into your protein smoothie after a workout. Pumpkin is loaded with fiber, some protein along with key vitamins and minerals. I am sure it gives your smoothie some awesome flavor too. ( sprinkle cinnamon on top!)
  • Chili: Instead of sour cream on your chili, why not throw a spoonful of pumpkin puree on that bad boy? Adds flavor and a creaminess to your meal.

Aside from the puree you can toast the pumpkin seeds from your pumpkin with some salt and garlic powder. I even like chili powder sprinkled on them for a little kick.

Pumpkin has been shown to reduce inflammation and it is also good for your heart health. Remember, always choose organic when buying canned pumpkin, and eat in moderation. Enjoy!
